This unique stretchy, chewy halva is made from pure tahini (sesame paste), sugar syrup, glucose, citric acid, and soapwort root extract (shirsh al-halawa). The soapwort root is a natural plant extract that gives Shosheiah halva its distinctive elastic, stretchy texture and bright white color, making it completely different from regular crumbly halva. This traditional sweet is especially famous in Homs, Syria, where it is known as one of the city's signature confections alongside other Homsi halva varieties like Bashmiyeh and Simsimiyeh.
